Home Chef Bacon and Cheddar Jack Meatloaf

Hey y’all hey! I made this video in the fall, but this dinner is SO good that I wanted to share it here! Are there FALL decorations on my porch? Well, yes there are! But! Dinner is coming in a few hours and again tomorrow night, so get your Home Chef on and enjoy the meal. Doesn’t matter if it is spring, summer, fall or winter!

This one is a great meal for a busy family, y’all! It’s from Home Chef and everything is delivered right to my house. I’ve tried several of the home delivery, ready to cook meals, and Home Chef is by far my favorite! Tonight, we are making Bacon and Cheddar-Jack Meatloaf with Smoky BBQ sauce and Ranch Green Beans. Except things like salt and pepper, each box comes with all of the ingredients you’ll need in order to prepare a great meal. They also offer portion options, and mine is for a family of four. I get double everything and though there are five of us, it’s always enough!

Here’s the recipe card for this meal:

I received four packets of green beans because I ordered enough portions to serve my family of five.

And 20 ounces of ground beef

Included in the box were packs of saltines and mayonnaise. I crumbled the crackers while still in the packet, added them to my ground beef, then added the mayo and blended everything together. One of our friends said the mayo replaces the egg!

The next step was to place foil on a pan and shape the beef into two separate loaves. Then I added the enclosed bacon crumbles and cheese, and a sprinkle of salt and pepper. I put it in my preheated oven at 400 degrees. It’s already looking so good!

While the meatloaf is cooking, I’m starting on the green beans. The directions said to heat the pan with 1/4 cup of water and bring to a simmer. I had already added some oil, but I also added the water. I let that cook on the stove while Finn and I made the Ranch Sauce that will be drizzled on top of the cooked beans.

Finn always loves to help, and Home Chef meals almost always have something he can do!

Here’s the mixture for the Ranch Sauce: buttermilk dill seasoning, sour cream and 2 tbsp of water. I got a little carried away with the amount of water, so I added some things from the pantry to help thicken it up!

Once the beans are done, I’ll drizzle the sauce and crispy onions over the beans.

And once these are done, I’ll put the BBQ sauce over them.
