This colorful summer salad is a family favorite! Aunt Criddy made it recently for her crew, and they loved it!

Here are the ingredients and the recipe!

Hickabilly Carrot Raisin Pineapple Salad
3 to 4 carrots, shredded
12 oz box of raisins
20 oz can of pineapple tidbits with juice
Mayonnaise to taste
Sugar (Optional)
Peel carrots.
Using a grater, shred the carrots into a bowl. (Please note that you cannot cheat and get the precut carrot shreds. You need the juice that comes from the fresh carrots to help make the dressing.)
Add the raisins, pineapple and mayonnaise to the carrots. Start off with small amount of raisins, pineapple, pineapple juice and mayonnaise. You can always add ingredients, but you can’t take away. The dressing will be sweet from the mixture. If is not sweet enough, add sugar.
