Hey y’all! It’s Cooking with Criddy time! And she has two super simple recipes that you can make in a flash! Click on the videos to see her making this and another snack-type treat, or follow along here.
This first recipe only has three ingredients: Peas, onion and mayonnaise.
Our mom used to make this all the time, and Criddy said, according to mom, you “have” to use Kraft mayonnaise!
Here’s the recipe:
2 15oz cans of sweet peas, drained. Put in fridge to chill.
Finely choppped Vidalia onion. Vidalia onions are sweet, and well known in the southeast. There’s something about that soil in Vidalia, Georgia that makes them the perfect onion!
Kraft mayonnaise. Start with “some” and add by tasting once all ingredients are mixed.
Just fold together in the bowl so you don’t crush those little peas!
TIP: add what you love! Try cheese, bacon bits, boiled eggs, salt, pepper.

Part Two!
And now for Criddy’s Parmesan Toast
Ingredients:
Bread slices
Sliced Red Onion
Mayonnaise
Here’s how she makes it:
Turn oven on to 350 degrees.
Mix the grated Parmesan cheese with the mayonnaise in a small bowl.
Cut bread slices in half or quarters and place on a cookie sheet
On top of each bread slice, add the red onion .
Then spread the parmesan/mayonnaise mixture on top of the onions.
Aunt Criddy said to “place in the oven until you smell it”. Ok, Criddy!

Criddy’s assistant Janet, aka Ms. J, approves!

Thank you so much for visiting my blog! Let me know in the comments if you’ve ever tried these recipes and what you might add in!
Thanks again!
XOXO-Erin
