Hey girl, hey! Mr. Erin’s family is coming to visit for Christmas, so Finn and I made two of these quick and easy breakfast dishes. The video and recipe is below!

You’ll need:
A casserole dish
A pound of ground sausage
1/2 chopped onion
Grated cheese
Bread
5 eggs
Milk
Non stick spray
Let’s make it!
I used Jimmy Dean’s regular sausage.

Finn helped me spray the casserole dishes with non stick spray. (We made two quiches).

We laid bread down after spraying our dishes. The bread will serve as the “crust”.

I browned the sausage with the chopped onion, then added it as my layer over the bread.

We stirred a few eggs and too much milk together. It’s fine, it’s just fine!

The next layer is grated cheese, then we poured the egg / milk over that.

Cover with foil and let it sit overnight in the fridge.

In the morning, all you have to do is place it in a preheated 350 degree oven. Cook for 30 minutes, then remove the foil. Cook 10 more minutes until the cheese is bubbly and just starting to brown.
This is a great recipe for special occasion mornings, especially Christmas! Do you have a go-to breakfast casserole? Please comment below and let me know! Thank you so much for stopping by!
XOXO-Erin
