This is such a delicious, cold salad and perfect for a summertime meal!

It is a beautiful AND yummy side dish! We paired it with Mr. Erin’s smoked pork belly and some mac and cheese. Soooo gooood!


Ingredients:
18 oz bag Broccoli Florets
2 cups Sharp Cheddar Cheese shredded
12 oz jar Marie’s Cole Slaw dressing
1/2 to 1 cup of Bacon Crumbles (depends on how you like it)
1/2 to 1 cup Sunmaid Raisins (or Craisins) (Also depends on how you like it)
6-8 pinches Sugar
About 9 oz Milk (You will pour this into the cole slaw dressing jar)

Let’s make it!
Pour the coleslaw dressing in a large mixing bowl until jar is empty. Use the jar for the next step.
Pour about 9 oz of milk into the (now empty) coleslaw jar. Add 6-8 pinches of sugar to the jar. Place the lid back on and shake.
Pour mixture into bowl with the coleslaw dressing.
Whisk until blended.
Fold in broccoli florets
Add bacon (measure your bacon with love!)
Add cheese (I used the whole bag!)
Add raisins (or craisins)
Here I’m adding the coleslaw dressing, milk and sugar to the bowl. By the way, this is my Pioneer Woman mixing bowl from Walmart.

I added the entire bag of broccoli florets (I have a family of 5).

BACON! CHEESE! I know, I know, but y’all, we love us some bacon and cheese around here!
I also added raisins, but you can omit those if you want.

Turn mixture over as if to toss. Continue until everything is mixed well.
Cover and put in fridge for at least an hour, and you’re ready to enjoy your summer salad!
TIP: Our friends suggested adding: walnuts, apples, chopped pecans, onions or slivered almonds.

The pork belly is about to go in for another round in the smoker! It is already so tender and good. Mr. Erin added butter, brown sugar and apple juice and took it back out to smoke another hour or so.
