Aunt Criddy’s Butter Chicken Recipe

Aunt Criddy makes one of our favorite meals, and that is her Butter Chicken. Every time she comes to visit, it’s one thing we always request of her to make for us. It’s a family favorite for sure, Aunt Criddy and Butter Chicken of course!

Can’t you just smell the goodness?

Here’s what you’ll need:

3-5 cubed boneless chicken breasts

2-4 TBSP oil
1 Box Patak’s 3 Simple Steps Butter Chicken Curry Sauce Kit
2 Jars Patak’s Butter Chicken Simmer Sauce
1 Jar Patak’s Mango Chutney
2 cinnamon sticks (If not in packaged sauce kit)
Naan Bread (Aunt Criddy recommends Stonefire Brand)
Jasmine or Basmati rice (Criddy uses Minute Maid brand)

Cut the chicken into cubes
Heat 2 to 4 TBSP of oil in a pan over medium-high heat
Add the Butter Chicken Curry Sauce Kit (which is 2 cinnamon sticks, 2 Bayleaves and a handful of fenugreek leaves.)
Stir for 5 to 10 seconds.

(Fun fact: When that spice mix hits the oil, the aroma that flows through your house is amazing!)

Add the diced boneless chicken breast in the pan along with the spice mix.
Brown the chicken.
Once the chicken is browned, take everything out of the pan and place it on a paper plate or paper towel to help remove the excess oil from the chicken.
Turn the pan down to low heat and add the butter sauce and chicken.
Discard the paper plate/towel along with the cinnamon sticks and bay leaves.

Cook until the sauce is hot.
While the chicken and sauce are simmering, cook rice in the microwave and preheat oven to 350 degrees.
Warm the Naan bread in the oven

To serve: Place cooked rice with butter chicken on top. Add mango chutney to a piece of Naan bread. Use the bread to pick up rice and chicken.

Helpful hint: Aunt Criddy gets Patak’s Butter Chicken supplies from the International/Asian aisle at Walmart. She says “Ours is a family of four and sometimes we want leftovers for the next day because it’s that good!”
